Role Statement:
50% Teaching.
I teach the senior dietetic students in a Coordinated Program. This combines their clinical experience and their didactic course work (qualitative intensive). Students move to Salt Lake and get the experiences needed to pass the national registration examination to become dietitians. I also teach the senior research class for dietetic students (qualitative course). The students plan and conduct the research, followed by writing a paper and present a poster session at the Utah Dietetic Association. The third course I team teach is a multi-discipline course of professionals that emphasize advocacy for children with special health care needs. This is sponsored by the special education program is entitled the Utah Region Leadership and Education in Neurodevelopmental Disabilities, the Utah LEND program.
40% Extension.
My main curriculum development has been in diabetes education focused on food portioning skills, and a curriculum on cardiac health incorporating nutrition and exercise. Guest speaking at conferences and serving as a resource for County Extension Agents is also part of my role.I incorporate my research activities with the Extension assignment, emphasizing education for diabetes, cardiovascular disease, cystic fibrosis, and disabilities.
10% Service.
I am director of the low income nutrition education programs, which include the Expanded Food and Nutrition Education Program (EFNEP) and the Supplemental Nutrition Assistant Program, Nutrition Education component (SNAP-Ed). I also serve on the advisory board for the Utah Food Bank, the Utah Health Department Diabetes Program and Cardiovascular Program.
